Black Bean and Corn Salsa

- 15 oz black beans
- 1 cup fresh or frozen corn kernels
- 1 medium tomato
- 1 small bell pepper (yellow or red is best)
- 1/2 small red onion, diced small
- 1 garlic clove, minced
- 1/2 cup cilantro, finely chopped
- 2 canned chipotle chili in adobo sauce, finely chopped, + 2 T adobo sauce
- 1 lime, zested
- 1/2 lime juice
- 1/4 tsp salt
Instructions
- Mix all ingredients in bowl.
- Cover & refrigerate at least 30 minutes to allow flavors to meld.
- Serve with tortilla chips.
